My headcanon is that firescales react with oxygen, so prolonged contact with a solid surface makes them cool down. Thus, the bottoms of Peril's talons aren't nearly as hot as the rest of her. Also, it's possible that SkyWing metallurgy hasn't advanced to the point that they can melt metals that require more heat than their fire breath can provide. If so, it's entirely possible that their "fireproof" metal is something like bronze, which I think (off the top of my head) has a lower melting point than most common igneous rock.
