Summary
Zuko knows his father does not believe the Avatar is alive, he does not truly expect him to find them. He's being punished for his disrespect, for not living up to what his father demands. He might deserve it, but he won't spend his life looking for someone who hasn't existed in nearly one hundred years.
If he's going to be a disappointment, he may as well do what he pleases, and if that means joining a pirate crew, chasing some spirits and blowing up whatever Fire Navy harbors are on the way, so be it.

He and Iroh become traitors the moment they attack Zhao—a high-ranking officer—during a military invasion, committing high treason. I've always felt like Aang's firebending training was rushed and cut too short. We also don't get any of the inner turmoil Zuko must be going through with leaving everything behind, so this is my retelling of the second half of season 3 (and perhaps a bit beyond too).
